Why? I was also wondering why the light fittings might be covered up with a sheet of perspex?
Usually stainless steel for hygiene purposes, as it can be cleaned with very hot water and cleaning fluids. The lights are covered with perspex for safety, if the bulbs break for any reason the perspex shield will catch it and protects the bulb from accidental breakage.

Steel. Because it doesn't stain and you can't put a big gauge in it where bacteria would grow. Lights will be covered with perspex in case a bulb blows, to stop parts falling onto food.

It is usually made of aluminium because this is hard wearing and long lasting, and the light fittings are covered for safety reasons

Stainless steel it is easily cleaned and thus more hygienic. As for the lights being covered in perspex there is the safety factor and the diffusion of light.
